The Neapolitan pizza is cooked in firewood ovens with a cooking temperature of 485 °C required for getting the true Neapolitan pizza, It’s very important the pizza is uniformly cooked on all its circumference and the cooking times wouldn't b e to be more than 60-90 seconds. Only the traditional Neapolitan MANNA ovens thanks to the used construction materials and its right proportion of the dimensions guarantees the above mentioned cooking criteria.
